In the current research of Lab4Food (University of Leuven - Campus Geel) several aspects regarding the use of insects as a new raw material or ingredient for food and feed and as biobased chemicals are investigated. We perform research on the relationship between the rearing and processing methods and their microbiological and nutritional quality. Since the barrier to consume insects is high in the Western world, we also develop new foodstuffs in which insects are unrecognizably incorporated. In addition, the potential of insects as an ingredient in animal feed is explored. Furthermore, we extract proteins, fats and chitin and study their properties and potential application as an additive for food and feed.
