In the current research of Lab4Food (University of Leuven – Campus Geel) several aspects regarding the use of insects as a new raw material or ingredient for food and feed and as biobased chemicals are investigated. We perform research on the relationship between the rearing and processing methods and their microbiological and nutritional quality. Since the barrier to consume insects is high in the Western world, we also develop new foodstuffs in which insects are unrecognizably incorporated. In addition, the potential of insects as an ingredient in animal feed is explored. Furthermore, we extract proteins, fats and chitin and study their properties and potential application as an additive for food and feed. The Rising Demand for Protein in the Aquaculture Sector
The aquaculture sector is facing a serious challenge. Rising global demand for fishmeal has primarily been caused by increased fish and livestock production. Annual fluctuations in the supply of fishmeal has resulted in price volatility. In the last 10 years, the price of fishmeal has risen by and average of 7% per year. In any given year, the price can rise by 100% or decrease by 75-50%, depending on the yield of the fish caught specifically for use in fishmeal. The international commodity price for fishmeal fluctuates between €1000-€2000 per ton.
